Chef Isaac Olivo

A New York City native, brings a distinctive blend of passion, creativity, and refined technique to his cuisine. Inspired from an early age by the cooking of his father and grandmother, he developed a deep appreciation for food as both craft and expression—an interest that led him to pursue formal training at Le Cordon Bleu.

His career has taken him through some of the most respected kitchens in the country, including Jean-Georges in New York City and The Peninsula New York, where he honed his foundation in classical technique and modern execution. He further refined his culinary voice working alongside acclaimed chefs such as Michael Mina and Tom Colicchio, gaining invaluable experience at the highest levels of the industry.

Chef Olivo has since held a series of distinguished leadership roles, including Executive Chef at Amorette in Pennsylvania, and overseeing the dining program at the prestigious Mayflower Inn & Spa, a Relais & Châteaux property. For the past five years, he has led the celebrated Cuvée at the Chatham Inn, a Forbes Five-Star Relais & Châteaux destination, where his cuisine has earned widespread recognition for its elegance and precision.

Known for his thoughtful, seasonal approach, Chef Olivo seamlessly blends classical French technique with contemporary American sensibilities. His work reflects a deep commitment to sustainability and responsible sourcing—values he has championed on an international stage, representing Relais & Châteaux at events such as World Oceans Day in support of ocean conservation.

Chef Olivo’s cuisine is both refined and personal—an expression of heritage, discipline, and a continued pursuit of excellence.
